These Strawberry Cheesecake Breakfast Parfait have 18 grams of protein and are one of my favorite ways to start the day! With layers of sweetened whipped cottage cheese, fresh strawberries, and granola, this high-protein treat tastes like dessert for breakfast. Swap the cottage cheese for Greek yogurt, sweeten it a bit more to turn it into a dessert parfait, or meal prep it for the week ahead. I love that the breakfast parfaits come together in just 5 minutes and taste just like cheesecake!
Blend cottage cheese, chia seeds, maple syrup, and vanilla until smooth.
Layer the mixture in a glass or jar with strawberries and granola.
Add any toppings you want and enjoy or store overnight in the fridge for a prepped-ahead breakfast!

Feel free to substitute the Greek yogurt for the cottage cheese!
Refrigerator - Place in small airtight containers, then store in the refrigerator overnight or for up to 2-3 days!
Freezer - Keeping the granola separate (as it may get soggy), store the cheesecake parfaits in small mason jars with airtight lids in the freezer for up to 2 weeks. When ready to enjoy, simply thaw the parfaits at room temperature for about 20-25 minutes and break them up with a spoon (for an ice cream texture) or in the fridge the night before.
