Strawberry Cottage Cheese Waffles

1 1/4 cup all-purpose flour or whole wheat, spooned and leveled 1 teaspoon baking powder 1/2 teaspoon ground cinnamon 1 cup 4% cottage cheese 1 cup diced strawberries approx. 6-8 strawberries, divided 3 large eggs 1 teaspoon vanilla extract 1 Tablespoon maple syrup plus more for serving 3 Tablespoons milk of choice 3 Tablespoons coconut oil melted and cooled extra chopped strawberries as garnish optional avocado oil cooking spray to grease waffle iron
In a large bowl, combine the dry ingredients and whisk. Set aside.
Add the cottage cheese, ½ cup of the diced strawberries, eggs, vanilla, maple syrup, and milk to the blender and blend until smooth.
Add the blended ingredients to the dry ingredients and whisk until mostly combined.
Whisk in the coconut oil, still until well combined. The batter will be thick. Don’t overmix.
Fold in remaining 1/2 cup diced strawberries.
Heat a waffle iron and spray with cooking spray.
Scoop 1/3 cup batter into each waffle cavity.
Cook 3-4 minutes (mine took just under 3 minutes, but this depends on the waffle iron).
Top with syrup and chopped strawberries and enjoy!
