Strawberry Popsicles Recipe

These Strawberry Chia Seed Popsicles are sweet, refreshing, and perfect for warm summer days! I've been making this recipe for YEARS and it's my secret method for getting my kids to eat more fruit. Made with just 5 ingredients in a blender, this Strawberry Popsicles recipe is vegan, gluten-free, dairy-free, and refined sugar-free. My family and I love this sweet healthy frozen treat and I know you will, too!

Ingredients

  • 1/4 cup chia seeds
  • 1/4 cup lemon juice
  • 3 cups ripe strawberries washed and tops cut off
  • 1 1/2 cups plant-based milk
  • 2-3 Tablespoons maple syrup

Instructions

  • Mix the chia seeds and lemon juice together and stir. Set aside while you prep the other ingredients.
  • Pour the chia seed mixture, the prepped strawberries, milk, and maple syrup into the blender.
  • Blend until evenly smooth.
  • Pour into a popsicle mold and add the lid and popsicle sticks.
  • Freeze for at least 12 hours.
  • Remove the popsicles from the mold and enjoy, storing any extra popsicles in an airtight container with parchment paper between each popsicle. Enjoy!
