Sushi Bowls

Easy Sushi Bowls made in under 15 minutes and no cooking required! These are my go-to when I’m craving sushi but want something super quick and easy. Made with spicy tuna, marinated cucumbers, creamy avocado, edamame, and warm rice, they have all the flavors of my favorite sushi roll without any of the rolling stress. And with 29 grams of protein and lots of fiber, these bowls are healthy, balanced, and protein-forward. My family and I love these for busy weeknights, meal prep lunches, or hot summer days!

Ingredients

Marinated Cucumbers

  • 1 Tablespoon rice vinegar
  • 2-3 Tablespoons chili crunch stirred well
  • 1/2 Tablespoon honey
  • 1/8 teaspoon salt
  • 1 medium cucumber thinly sliced

Spicy Tuna

  • 2 6-ounce cans cooked salmon or tuna
  • 1/4 cup light mayo or plain Greek yogurt
  • 2-4 teaspoons sriracha
  • 1 teaspoon sesame oil divided
  • 2 teaspoons soy sauce or tamari for a gluten-free version
  • 1 teaspoon lime juice

Bowls

  • 1 1/2 cups shelled edamame warmed
  • 2 cups cooked rice warmed
  • 2-3 large nori sheets seaweed cut into small pieces
  • 1 medium avocado cubed
  • sesame seeds garnish
  • green onion garnish chopped

Instructions

  • Whisk the marinade ingredients together, then add in the sliced cucumbers (tossing to coat evenly), cover, and set aside.
  • Meanwhile, combine the spicy tuna ingredients. And more or less sriracha, depending on spicy you want it to be!
  • Warm the rice and the edamame, then divide into bowls.
  • Top with the marinated cucumbers, spicy tuna, nori, avocado, sesame seeds, and green onions.
  • Drizzle with any remaining marinade from the cucumbers and enjoy!
