Sweet and Sour Meatballs

This Sweet & Sour Meatballs recipe can be made in just 30 minutes! The baked meatballs are coated in a sweet and tangy sauce, mixed with veggies, and served over rice for an easy healthy dinner. It's perfect for busy weeknights and the pickiest of eaters!

Ingredients

Meatballs

  • 1 pound lean ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Sauce

  • 1 Tablespoon soy sauce
  • 2 Tablespoons rice vinegar
  • 1/4 cup brown sugar
  • 1/2 cup chicken broth
  • 2/3 cup pineapple juice
  • 1 Tablespoon tomato paste
  • 1 Tablespoon cornstarch

Stir Fry

  • 1 Tablespoon avocado oil
  • 1 medium onion diced
  • 1 medium red pepper diced
  • 1 medium yellow pepper diced
  • 1/2 cup diced pineapple
  • 2 cups cooked rice
  • cilantro and green onions optional, for topping

Instructions

  • Preheat the oven to 425 degrees F.
  • Combine all ingredients for the meatballs in a bowl and mix well to combine.
  • Use about a 1 1/2 Tablespoon spoon to scoop the meatball mixture into balls.
  • Place on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the internal temperature reaches 160 degrees F.
  • Meanwhile, heat the oil in a skillet and saute the onion and bell peppers.
  • Whisk together all ingredients for the sauce in a small bowl.
  • When the meatballs are done, add them to the skillet with the peppers and add in the sauce.
  • Allow the sauce to thicken for 5 or so minutes, stirring regularly. It will seem saucy at first but will thicken!
  • Add in the pineapple and toss to combine.
  • Serve with rice, cilantro, or green onions!

Notes

  • This recipe makes about 18-20 smaller meatballs or 12-14 larger meatballs.
  • Refrigerator - Store in an airtight container for up to 4 days!
  • Freezer - Airtight container for up to 3 months.
  • Reheat - 2-3 minutes in the microwave for refrigerated or 3-4 minutes for frozen.
