Ingredients

  • 1/2 cup rolled oats
  • 2 Tablespoons almond flour
  • 2 Tablespoons chopped walnuts or pecans
  • 2 teaspoons coconut oil or butter
  • 2 tsp cinnamon
  • 2 teaspoons almond milk
  • 2 Tablespoons maple syrup divided
  • 1 cup vanilla Greek yogurt
  • 1 medium apple cubed

Instructions

  • Mix rolled oats, almond flour, walnuts, coconut oil, cinnamon, almond milk, and 1 Tablespoon of maple syrup in a microwave-safe bowl.
  • Microwave for about 45 seconds to 1 minute, stirring every 15 seconds.
  • Layer two cups or bowls with Greek yogurt, the oatmeal "crumble", and cubed apples.
  • Drizzle each cup with the remaining maple syrup and enjoy!

Tips:
  • You can bake the oatmeal crumble in the oven or an air fryer for a crispier texture.
  • Feel free to replace the yogurt with vanilla ice cream, if desired!
  • You can also heat the apples up with the crumble (instead of using fresh apples). If you do, I recommend removing the skin and soaking the apples in lemon juice, first!
  • You can also add in blackberries, pears, or any other fall fruit!

    To meal prep this easy apple crumble recipe the night before, mix the oats, flour, walnuts, and cinnamon together in a bowl. Cover and keep at room temperature overnight. Combine the apples, yogurt, and maple syrup and store them in a separate airtight container.
    In the morning, add the coconut oil, almond milk, and maple syrup to the oat mixture, then microwave. Combine with the apples and yogurt, then enjoy!
