These Vegan Cookie Bars are SO good! You wouldn't believe that they're gluten-free, dairy-free, egg-free, and vegan. These delicious chocolate chip cookie bars are easy to make, perfect for any occasion, and full of melt-in-your-mouth goodness!

2 cups gluten-free flour or all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt 2 vegan eggs 1/2 cup vegan butter softened 1/2 cup granulated sugar 1/2 cup brown sugar 1/4 cup agave syrup 1 teaspoon vanilla extract 2 Tablespoons creamy nut butter 1 cup vegan chocolate chips
Preheat the oven to 350 degrees F.
Combine the flour, baking soda, and salt in a large mixing bowl.
In a small bowl, mix the vegan egg substitute with water (according to directions) and set aside.
In a separate bowl, combine the vegan butter, granulated sugar, brown sugar, agave syrup, vanilla extract, and nut butter until smooth.
Add in the vegan eggs and mix.
Pour the liquid ingredients into the dry ingredients and mix until just well combined.
Mix in the chocolate chips.
Pour into a 9x9” baking pan lined with parchment paper and lightly smooth out with a spatula.
Bake for about 27-30 minutes.
Let cool for 10 minutes, then slice into 12-16 bars and enjoy!
