Vegan Cookie Bars (Gluten-Free)

These Vegan Cookie Bars are SO good! You wouldn't believe that they're gluten-free, dairy-free, egg-free, and vegan. These delicious chocolate chip cookie bars are easy to make, perfect for any occasion, and full of melt-in-your-mouth goodness!

Ingredients

  • 2 cups gluten-free flour or all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 vegan eggs
  • 1/2 cup vegan butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup agave syrup
  • 1 teaspoon vanilla extract
  • 2 Tablespoons creamy nut butter
  • 1 cup vegan chocolate chips

Instructions

  • Preheat the oven to 350 degrees F.
  • Combine the flour, baking soda, and salt in a large mixing bowl.
  • In a small bowl, mix the vegan egg substitute with water (according to directions) and set aside.
  • In a separate bowl, combine the vegan butter, granulated sugar, brown sugar, agave syrup, vanilla extract, and nut butter until smooth.
  • Add in the vegan eggs and mix.
  • Pour the liquid ingredients into the dry ingredients and mix until just well combined.
  • Mix in the chocolate chips.
  • Pour into a 9x9” baking pan lined with parchment paper and lightly smooth out with a spatula.
  • Bake for about 27-30 minutes.
  • Let cool for 10 minutes, then slice into 12-16 bars and enjoy!
