Chicken Broccoli Stuffing Casserole

Ingredients

  • 1 large carrot, diced
  • 1 medium celery stalk, diced
  • 1 cup diced yellow onion
  • 2 Tablespoons olive oil
  • 1 box stove top stuffing 6 ounces
  • 1 1/2 cups chicken broth
  • 2 cups cooked chicken, cubed or shredded about 2 large chicken breasts
  • 2 cups broccoli florets, steamed
  • 2 cans condensed cream of chicken soup 10 ounces
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups cheddar cheese, divided

Instructions

  • Preheat the oven to 350 degrees F.
  • Saute the diced carrot, celery, and onion with the olive oil for about 5-7 minutes.
  • Add in the boxed stuffing and chicken broth and cook down for 5-10 minutes. Set aside.
  • Meanwhile, add the chicken, steamed broccoli florets, condensed soup, salt, pepper, and 3/4 cup of the cheese to a bowl. Toss well to combine.
  • Transfer to a large casserole dish.
  • Top with the stuffing and the remaining cheddar cheese.
  • Cover with foil and bake for 20 minutes.
  • Serve immediately and enjoy!
