Spicy Vodka Ham Pasta

This quick and easy Spicy Vodka Ham Pasta is so flavorful and delicious! Made with a healthier version of the classic spicy vodka sauce, cooked ham (or your choice of protein), and rigatoni pasta, this is truly a dish that everyone will love. Top it all off with freshly grated parmesan and red pepper flakes for the ultimate restaurant experience at home!

Ingredients

  • 12 ounces rigatoni
  • 1/4 cup olive oil
  • 2 medium shallots, diced
  • 1 Tablespoon minced garlic
  • 1/2 cup tomato paste
  • 1/4 cup vodka
  • 2/3 cup Greek yogurt + 1/2 cup warm water
  • 2/3 cup grated parmesan
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 2 cups chopped ham
  • 2 cups chopped kale

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  • In a large saute pan, add the olive oil and diced shallots. 
  • Saute for 3-4 minutes, then add in the garlic and saute an additional 1-2 minutes.
  • Add in the tomato paste and cook for 2-3 minutes to bring out the flavors.
  • Pour in the vodka and simmer until most of the liquid has cooked off.
  • Whisk together the plain greek yogurt with the warm water, then pour into the pot and mix.
  • Add in the parmesan, red pepper flakes, and salt.
  • Let simmer for a couple of minutes. Leave as is or blend until completely smooth. 
  • Stir in the cooked pasta, ham, and chopped kale. Let the kale wilt over low heat for 1-2 minutes. 
  • Remove from heat and garnish with fresh basil, parmesan, and red pepper flakes!
