These cute and patriotic Mini Fruit Breakfast Tarts have been one of my family's favorite treats for the 4th of July for YEARS! With lots of 5-star ratings, this recipe is honestly such a fun way to celebrate the holiday. The tart shells are naturally sweetened and made with an almond and oat flour base, so they're perfectly crispy, a little crumbly (in the best way), and sweet. They're filled with Greek yogurt for added protein and topped with coconut flakes, fresh berries, and a drizzle of honey to create a festive American flag design that’s almost too cute to eat. Feel free to add any toppings you want! These would be so good with chocolate chips, peanuts, caramel, and really any type of fruit.
The shells will get soggy if they sit too long with the yogurt filling, so I recommend waiting to fill them until right before you serve them. Or you can even freeze them and just thaw them right before serving!
