I've been seeing these Viral Brownie Ball all over the internet lately and knew I had to make them! I added my own Thin Mint twist, but you can make them the classic chocolate way with a couple of easy swaps. With 6 grams of protein and made with healthy ingredients (in under 25 minutes), this easy protein treat is one of my favorites to have on hand when I'm craving chocolate! These taste like the best melt-in-your-mouth no-bake brownies. They're filling and SO good!
Soak the dates while you measure out the other ingredients.
Prepare a small baking sheet with parchment paper.
Drain and dry the dates, then place in a blender or food processor along with the oat flour, cacao powder, protein powder, maple syrup, almond butter, peppermint, and vanilla.
Blend until smooth, using a spatula to scrape the sides as needed. The “batter” will be thick!
Scoop the brownie “batter” into 5-6 balls and place on the baking sheet.
Place in the freezer for about 10 minutes.
Meanwhile, melt the dark chocolate chips and coconut oil together for about 30-45 seconds in the microwave, stirring every 15 seconds.
Coat each of the brownie balls in the chocolate.
Place back on the baking sheet and add flaky sea salt (or any topping).
Set in the fridge or freezer for about 10 minutes and enjoy!

Make these thin mint flavored with the mint protein powder and peppermint extract, or keep them chocolate brownie flavored by swapping for chocolate protein powder and more vanilla extract instead!
I like to store these in the fridge for about 1-2 days, or in the freezer for up to 2 weeks.
Not feeling the chocolate coating? Just mix in mini chocolate chips instead. These are still so delicious without it!
