Ingredients
- Deglet Dates – Medjool dates also work!
- Oat Flour – Almond flour can be subbed if needed.
- Cacao Powder
- Mint Protein Powder (about 1 scoop) – Brings that classic thin mint twist! Chocolate protein powder or vanilla works great, too.
- Maple Syrup
- Almond Butter – Sub with cookie butter or oat butter for a sweeter, more cookie-like flavor and texture.
- Vanilla Extract
- Peppermint Extract – For the Thin Mint flavor! If you want to make chocolate brownie balls, swap the peppermint for more vanilla extract.
- Dark Chocolate Chips
- Coconut Oil
- Flaky Sea Salt – Optional, but SO good and worth it!

How to Make Brownie Balls
I love how quick and easy this healthy, high-protein snacks comes together! All you’ll need is a Food Processor (or a good blender), and baking sheet, and about 25 minutes total time. Here’s how to make the BEST brownie balls:
- Soak the Dates – Let them sit in warm water while you prep the other ingredients.
- Blend Everything Up – Drain and dry the dates, then blend with the oat flour, cacao powder, protein powder, maple syrup, almond butter, peppermint, and vanilla. It should form a thick, sticky dough.
- Form into Balls – Scoop and roll into 5-6 brownie bites, placing them on a lined baking sheet.
- Chill – Pop them in the freezer for 10 minutes to firm up.
- Melt the Chocolate – Heat the dark chocolate chips with coconut oil until smooth.
- Dip & Set – Coat each ball in the chocolate and sprinkle with flaky salt. Chill again until set!

Tips
- Use a Food Processor or High-Quality Blender – This helps create a smooth and sticky mixture without overworking your machine.
- Sticky Dates Work Best – If your dates are dry, soak them in hot water for about 10 minutes. Drain them and dry them off before blending!
- Want it Less Minty? – Swap mint protein powder for chocolate and skip the peppermint extract for a classic brownie flavor.
- No Chocolate Coating – Not feeling the chocolate coating? Just mix in mini chocolate chips instead. These are still so delicious without it!
Variations
Classic Brownie Balls – Use chocolate protein powder and swap the peppermint for vanilla extract a more traditional taste.
Protein-Packed – Add an extra full scoop of your favorite protein for a post-workout treat!
Nut-Free Option – Use sunflower seed butter or oat butter instead of almond butter.
Chocolate Coconut Brownie Balls – Sprinkle shredded coconut over the chocolate coating before it sets. I love this easy variation!

How to Store
One of my favorite things about these brownie ball is that I can make a double batch and meal prep it for healthy snacks and desserts all week long! Here’s how to store them:
Refrigerator – Store in an airtight container for 1-2 days.
Freezer – Keep in a sealed freezer bag or airtight container for up to 2 weeks.
To Enjoy – When ready to enjoy, let them thaw for 5-10 minutes at room temp (if frozen) or overnight in the fridge for the perfect texture!
