Ingredients

  • 1/2 cup thinly sliced almonds
  • 3 cups cooked shredded or chopped chicken
  • 2 medium celery stalks, finely chopped
  • 2 medium scallions, chopped dark green parts
  • 1/4 cup parsley, finely chopped
  • 3/4 cup plain Greek yogurt or avocado oil mayo
  • 1 1/2 teaspoons dijon mustard
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped green olives optional
  • 2 Tablespoons dried cranberries optional
  • 1/2 teaspoon fine sea salt
  • 1 Tablespoon lemon juice

Instructions

  • Preheat the oven to 350 degrees F. and place sliced almonds on a rimmed sheet pan.
  • Bake for 5 minutes or until golden and toasty. Let cool for 5-10 minutes. 
  • Mix all ingredients together, including the cooled toasted almonds. 
  • Taste and adjust salt or lemon juice as needed.
  • Serve & enjoy!

Notes

  • Use leftover Rotisserie, roasted, grilled, or baked chicken for this recipe!
  • Swap yogurt for avocado mayo if you prefer.
