This Healthy Chicken Tortilla Soup can be made entirely in the slow cooker! It's easy to make and perfect for the entire family. Gluten-free and delicious!
Place chicken breasts in the slow cooker with the chopped onion, celery, carrots, and 1/2 cup of the broth.
Cook on high for 2 1/2 hours (or low for 5). Ensure chicken is about 90% cooked throughout. Shred the chicken inside of the slow cooker.
Add the rest of the ingredients to the slow cooker and stir. Cook for another 1 - 1 1/2 hours on high or 2-3 hours on low (or until vegetables have softened).
