Vegan, healthy, and SO GOOD, these Sofritas Meal Prep Bowls only take 15 minutes to make! The tofu soaks up a smokey, spicy, and slightly sweet sauce. Add that to a hearty bowl of rice, beans, and lettuce, and you have a satisfying, tasty lunch or dinner that's full of flavor. It's easy to customize these healthy meal prep bowls to your own taste or add your favorite toppings, too!

Remove the tofu from the package and drain the liquid. Wrap the tofu in a clean towel or paper towels and gently squeeze, removing as much liquid as you can. Replace the towel or paper towel when they’re saturated.
Crumble the dried tofu into a large non-stick skillet and add the remaining sofritas ingredients.
Stir well and turn the heat to medium high.
Cook the sofritas over the heat for about 10 minutes until the sauce is completely absorbed into the tofu and it begins to brown a bit.
Add 1/2 cup rice to each bowl or meal prep container. Divide the beans, sofritas, and shredded lettuce evenly between bowls.
Top with sliced avocado and your favorite toppings!

Tofu Tips: Use firm or extra-firm, remove excess liquid by pressing in a clean towel, and stir gently to keep large crumbles.Storing: 3-5 days in an airtight container in the fridge or 1-2 months in the freezer. Add the fresh avocado right before serving!
