Chocolate Covered Strawberry Overnight Oats

Creamy, sweet Strawberry Overnight Oats covered in a layer of dark chocolate and topped with freeze dried strawberries! Prep these healthy oats in just a few minutes the night before, then add the chocolate layer, set for a few minutes in the fridge, and enjoy. Ingredients

Strawberry Overnight Oats

  • 8-10 medium ripe strawberries mashed or blended
  • 1 cup rolled oats
  • 1 Tablespoon almond butter
  • 1 cup vanilla almond milk
  • 2 Tablespoons maple syrup or to taste
  • 1/4 cup vanilla Greek yogurt

Dark Chocolate Topping

Instructions

  • Mash or blend the ripe strawberries.
  • Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.
  • Mix, add lids, and refrigerate for 4-6 hours (or overnight).
  • In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
  • Pour the melted chocolate over the oats and spread into a very thin layer.
  • Immediately add the crumbled freeze dried strawberries over the chocolate.
  • Place in the fridge for another 10 minutes, then enjoy!

Tips:
  • Feel free to skip the chocolate magic shell and just mix in chocolate chips, if desired!
  • Mix in crumbled freeze dried strawberry powder for a more pink color and more strawberry flavor.
  • Adjust the amount of maple syrup to taste.
  • Add any toppings that you want - shredded coconut, flaky sea salt, peanut butter drizzle, or even dried rose petals for a fun twist!
