Chocolate Covered Strawberry Overnight Oats

Prep these healthy oats in just a few minutes the night before, then add the chocolate layer, set for a few minutes in the fridge, and enjoy. Strawberry Overnight Oats 8-10 medium ripe strawberries mashed or blended 1 cup rolled oats 1 Tablespoon almond butter 1 cup vanilla almond milk 2 Tablespoons maple syrup or to taste 1/4 cup vanilla Greek yogurt
Mash or blend the ripe strawberries.
Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.
Mix, add lids, and refrigerate for 4-6 hours (or overnight).
In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
Pour the melted chocolate over the oats and spread into a very thin layer.
Immediately add the crumbled freeze dried strawberries over the chocolate.
Place in the fridge for another 10 minutes, then enjoy!
Tips:
Feel free to skip the chocolate magic shell and just mix in chocolate chips, if desired!
Mix in crumbled freeze dried strawberry powder for a more pink color and more strawberry flavor.
Adjust the amount of maple syrup to taste.
Add any toppings that you want - shredded coconut, flaky sea salt, peanut butter drizzle, or even dried rose petals for a fun twist!
