Meal prep these Chocolate Covered Strawberry Overnight Oats in just a few minutes, refrigerate, and simply add the chocolate layer in the morning! Here’s how to make this easy overnight oats recipe:
- Mash or blend the ripe strawberries.
- Mix with the oats ingredients (either in separate containers or one big container).
- Store with a lid overnight.
- In the morning, quickly melt the chocolate and pour a thin layer over the oats.
- Immediately add the crumbled freeze dried strawberries over the chocolate.
- Refrigerate for another 10 minutes to set, then enjoy!
Tips
- Feel free to skip the chocolate magic shell and just mix in chocolate chips, if desired!
- Mix in crumbled freeze dried strawberry powder for a more pink color and more strawberry flavor.

- 8-10 medium ripe strawberries (mashed or blended)
- 1 cup rolled oats
- 1 Tablespoon almond butter
- 1 cup vanilla almond milk
- 2 Tablespoons maple syrup (or to taste)
- 1/4 cup vanilla Greek yogurt
Dark Chocolate Topping
- 2 Tablespoons dark chocolate chips
- 1 teaspoon coconut oil
- 1 teaspoon crumbled freeze dried strawberries
Instructions
- Mash or blend the ripe strawberries.
- Divide the strawberries, oats, almond butter, milk, maple syrup, and yogurt into two containers.
- Mix, add lids, and refrigerate for 4-6 hours (or overnight).
- In the morning, melt the chocolate and coconut oil together in the microwave for about 30-45 seconds, stirring every 15 seconds.
- Pour the melted chocolate over the oats and spread into a very thin layer.
- Immediately add the crumbled freeze dried strawberries over the chocolate.
- Place in the fridge for another 10 minutes, then enjoy!
