This Chocolate Mousse Parfait recipe is thick, creamy, and surprisingly easy to create with simple ingredients you may already have on hand! Made with cottage cheese, melted chocolate, chia seeds, and fresh strawberries, it's a delicious dessert that tastes indulgent but secretly has 14 grams of protein and 5 grams of fiber to keep you full. Place the chopped chocolate in a microwave safe bowl. Microwave for 20 second intervals, stirring in between, until the chocolate is fully melted. Let cool for 5 minutes.
Add the melted chocolate to a blender along with the remaining mousse ingredients.
Blend for 2-3 minutes until thick, creamy and smooth. Pause and scrape down the sides of the blender as needed.
Transfer mousse to a large bowl, cover with plastic wrap and refrigerate for 6 hours or overnight.
Before assembling, combine the whipped cream ingredients in a bowl and whisk until stiff peaks form, about 3-5 minutes.
Arrange 6 parfait cups and layer with: chocolate mousse, whipped cream, chopped strawberries, more chocolate mousse & berries! Garnish with fresh mint.
