Protein-Forward Chocolate Mousse Parfait
This recipe is part of my “Shop My Pantry” series on Instagram, where I’m challenging myself to use ingredients I already have in my fridge and pantry instead of constantly buying more groceries. My lemon mascarpone pasta was also a part of that series and was a huge hit!
One thing about me is that after the kids go to bed every night, I just have to have some sort of little dessert! And this healthier protein and fiber chocolate mousse parfait recipe has been on repeat here lately. It’s honestly SO dreamy!
The cottage cheese blends completely smooth, creating a silky mousse with a bold chocolate flavor. Then, the whipped cream adds a light, fluffy element. Layered with fresh berries, these parfaits feel special enough for entertaining but are easy enough to keep in the fridge for everyday treats. Whether you’re trying to reduce food waste, shop your pantry a little more often, or simply need a chocolate fix, this recipe is such a treat!

Ingredients
Chocolate Mousse
- Semi-Sweet Chocolate – This forms the base of the mousse, providing a delicious chocolate flavor without being overpowering. For a bolder taste, feel free to use dark chocolate instead.
- Cottage Cheese – I recommend using full-fat cottage cheese for the best taste and texture.
- Chia Seeds – These help thicken the mousse while adding healthy fats and fiber.
- Cocoa Powder – This enhances the chocolate flavor. Feel free to use either Dutch-process cocoa or natural cocoa powder. Just make sure it’s unsweetened!
- Maple Syrup – Substitute honey if preferred.
- Milk – Whole milk will create the best flavor and creamiest consistency, but any cow’s milk or plant-based milk will work.
- Vanilla
- Salt
Whipped Cream
- Heavy Whipping Cream – Make sure it’s nice and cold!
- Confectioners’ Sugar (Powdered Sugar)
- Vanilla
Layering
- Strawberries – Or any type of berries!
- Fresh Mint – This is optional but adds a pop of brightness I love. Or you could add a sprig of thyme!

How to Make This Chocolate Mousse Parfait Recipe
This recipe looks and feels decadent, but I promise it’s actually SO easy to make! All you need is a microwave-safe bowl, a blender, an electric whisk, two large bowls, and six parfait cups. Here’s how to make this protein-forward Chocolate Mousse Parfait recipe:
- Melt the chocolate – Heat the chocolate in 20-second intervals in the microwave until it is completely melted. Make sure to stir in between to prevent it from seizing or burning! Then, set the chocolate aside to cool for 5 minutes.
- Blend the mousse – Combine the melted chocolate and remaining mousse ingredients in a blender, and blend until the mixture is thick, smooth, and creamy.
- Chill – Transfer the mousse to a large bowl, cover it with plastic wrap, and chill in the fridge for at least 6 hours or ideally overnight.
- Make the whipped cream – Whisk all the whipped cream ingredients in a bowl until stiff peaks form.
- Layer – Gather 6 parfait cups, and layer them with chocolate mousse, whipped cream, chopped strawberries, more chocolate mousse, and more strawberries. Garnish with fresh mint, and enjoy!


Tips
- Let the melted chocolate cool slightly. If the chocolate is too hot when added to the blender, it can seize or create a grainy texture.
- Blend longer than you think you need to. For the smoothest mousse, blend for at least 2-3 minutes and scrape down the sides as needed. This helps completely eliminate any cottage cheese texture, preventing any lumps in the mousse.
- Chill overnight if possible. The mousse thickens significantly as it chills, and the flavors become even better after a full night in the refrigerator.
- Use cold equipment for the whipped cream. For the fluffiest whipped cream, start with cold cream and, if possible, chill your mixing bowl before you begin.
- Use an electric mixer to make things easier. While you can whisk the cream by hand, I much prefer to use a hand mixer or stand mixer to make the process much faster.
- Taste before chilling. Depending on the sweetness of your chocolate, you may want to add a little extra maple syrup before refrigerating.

Variations
Swap the berries. Replace the strawberries with raspberries, blackberries, blueberries, or cherries for a different flavor combination.
Make chocolate-covered strawberry-inspired parfaits. Add a layer of finely chopped chocolate or chocolate shavings between the mousse and strawberries for an even more decadent dessert. Or, use chocolate-covered strawberries in place of the plain berries.
Include a crunchy layer. Sprinkle crushed graham crackers, healthy homemade granola, coconut flakes, chopped nuts, or cacao nibs between the layers for extra texture.
Add peanut butter. Blend 2-3 tablespoons of natural peanut butter into the mousse or drizzle peanut butter between the layers for Reese’s-inspired flavor.
Make mocha chocolate mousse. Add 1-2 teaspoons of instant espresso powder to the mousse ingredients to enhance the chocolate flavor and create a mocha-inspired dessert.
Skip the whipped cream. For a lower calorie, higher protein version, just omit the whipped cream layer. Or you can add a layer of vanilla yogurt instead!
How to Store
Once assembled, transfer leftover chocolate mousse parfaits to an airtight container or cover the parfait glasses tightly. Then, store leftovers in the refrigerator for up to 3 days. If possible, I recommend storing the chocolate mousse, whipped cream, and strawberries separately. Then, assemble the parfaits right before serving.
I don’t recommend freezing the assembled parfaits! The strawberries release excess moisture as they thaw, and the whipped cream can become watery.

Chocolate Mousse Parfaits

Ingredients
- 4 ounces semi sweet chocolate (chopped)
- 2 cups 4% cottage cheese
- 2 Tablespoons chia seeds
- 2 Tablespoons cocoa powder
- 1/4 cup maple syrup
- 2 Tablespoons milk of choice
- 1 Tablespoon pure vanilla extract
- 1/8 teaspoon salt
Whipped Cream (optional)
- 3/4 cup heavy whipping cream (cold from the fridge)
- 3 Tablespoons confectioners sugar
- 1 teaspoon vanilla extract
For the Layers
- 1 pound strawberries (chopped)
- Fresh mint (as garnish)
Instructions
- Place the chopped chocolate in a microwave safe bowl. Microwave for 20 second intervals, stirring in between, until the chocolate is fully melted. Let cool for 5 minutes.
- Add the melted chocolate to a blender along with the remaining mousse ingredients.
- Blend for 2-3 minutes until thick, creamy and smooth. Pause and scrape down the sides of the blender as needed.
- Transfer mousse to a large bowl, cover with plastic wrap and refrigerate for 6 hours or overnight.
- Before assembling, combine the whipped cream ingredients in a bowl and whisk until stiff peaks form, about 3-5 minutes.
- Arrange 6 parfait cups and layer with: chocolate mousse, whipped cream, chopped strawberries, more chocolate mousse & berries! Garnish with fresh mint.
