Chocolate Peanut Butter Overnight Oats

Chocolate Peanut Butter Overnight Oats are one of my favorite make-ahead breakfasts! They taste like a chocolate peanut butter cup but with more protein and good-for-you ingredients. The base is thick and creamy with lots of chocolate and peanut butter flavor on its own. And then we're adding that chocolate peanut butter topping for even more goodness! With just a 5-minute prep time, these oats are an easy way to make mornings feel a little special, all while being healthy and higher in protein.

Ingredients

Blended Overnight Oats

  • 2 cups rolled oats
  • 3 Tablespoons creamy peanut butter
  • 2 Tablespoons cocoa powder
  • 1/4 cup maple syrup
  • 3/4 cup vanilla Greek yogurt
  • 1 cup milk

Chocolate Peanut Butter Topping (Optional)

Instructions

  • Blend the oats, peanut butter, cocoa powder, maple syrup, yogurt, and milk together.
  • Divide into jars or individual airtight containers and store in the fridge overnight.
  • In the morning, melt the chocolate chips with the coconut oil for about 30-40 seconds in the microwave, stirring every 15 seconds.
  • Smooth a very thin layer of the chocolate topping over each container.
  • Immediately drizzle creamy peanut butter over the chocolate, then place in the fridge for 10-15 minutes. Enjoy!

Notes

  • Add more milk to adjust the consistency of the oat base as needed before adding the topping.
