Churro Cheesecake Baked Oats

Churro Cheesecake Baked Oats in just 30 minutes with 14 grams of protein. These are SO good and have been one of my favorite healthy breakfast recipes lately! They have a creamy, thick baked oatmeal base, then topped with lightly crispy cinnamon-sugar and a chocolate drizzle for the ultimate churro texture and flavor. Easily make them on busy mornings or even prep them the night before to save time!

Ingredients

Cheesecake Baked Oats

  • 3/4 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup milk
  • 2 teaspoons vanilla extract
  • 2-3 Tablespoons maple syrup
  • 1 large egg
  • 1/2 cup cottage cheese

Churro Topping

  • 1 teaspoon cinnamon
  • 2 Tablespoons granulated sugar

Chocolate Drizzle (optional)

  • 1 Tablespoon dark chocolate chips
  • 1/4 teaspoon coconut oil

Instructions

  • Preheat the oven to 350 degrees F.
  • Combine the rolled oats, cinnamon, baking powder, and salt (mixed directly in one large ramekin or mixed in a bowl and divided between smaller ramekins).
  • Blend the cottage cheese, milk, vanilla, maple syrup, and egg.
  • Pour the liquid ingredients over the dry ingredients and mix.
  • Top each ramekin with an even layer of cinnamon and sugar churro topping.
  • Bake for 20 minutes, then LOW broil for 5 minutes for a crispy topping texture (making sure that the sugar doesn't start to burn).
  • Let cool for 5 minutes.
  • Melt the chocolate chips with coconut oil and whisk together. Drizzle over the baked oats and enjoy!

Notes

  • Feel free to make this recipe directly in one large ramekin or mix the oats base in a bowl and divide between two smaller ramekins.
  • Not feeling the chocolate drizzle on top? Just mix chocolate chips into the batter instead!
  • To Make Ahead: Mix the baked oats batter and store in the fridge overnight with an airtight lid. In the morning, add about 2 Tablespoons of extra milk, stir, then add the cinnamon-sugar topping and bake!
  • Nutrition does not include the chocolate drizzle topping.
