- 3/4 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 2 teaspoons vanilla extract
- 2-3 Tablespoons maple syrup
- 1 large egg
- 1/2 cup cottage cheese
Churro Topping
- 1 teaspoon cinnamon
- 2 Tablespoons granulated sugar
Chocolate Drizzle (optional)
- 1 Tablespoon dark chocolate chips
- 1/4 teaspoon coconut oil
Instructions
- Preheat the oven to 350 degrees F.
- Combine the rolled oats, cinnamon, baking powder, and salt (mixed directly in one large ramekin or mixed in a bowl and divided between smaller ramekins).
- Blend the cottage cheese, milk, vanilla, maple syrup, and egg.
- Pour the liquid ingredients over the dry ingredients and mix.
- Top each ramekin with an even layer of cinnamon and sugar churro topping.
- Bake for 20 minutes, then LOW broil for 5 minutes for a crispy topping texture (making sure that the sugar doesn't start to burn).
- Let cool for 5 minutes.
