I've been making this Dulce De Leche Chia Seed Parfait recipe for YEARS and it's one of my favorite healthy breakfasts! With 15 grams of protein, these easy chia pudding parfaits come together in just 10 minutes and can even be meal-prepped the night before. The dulce de leche gives this pudding the BEST sweet and creamy taste and texture. Every bite is SO indulgently delicious!

  • Add the chia seeds, almond milk, maple syrup, and protein powder to a blender and blend on medium to high speed until mixed well and thick.
  • Warm the dulce de leche in the microwave until it’s melted and easy to drizzle.
  • Add some chia pudding to each cup, drizzle with dulce de leche, add more pudding, and top with more dulce de leche.
  • Top with chopped pecans and thinly sliced banana.
  • For best results, place the parfaits in the refrigerator for about an hour before serving.

Notes

    • Adjust Consistency: If your chia pudding feels too thick, just add a splash more almond milk to thin it out. If it’s too thin, let it sit for a bit longer or add a bit more chia seeds.
    • Customize Toppings: While I LOVE the combo of dulce de leche, pecans, and banana, feel free to mix it up! Try fresh berries, coconut flakes, or even a swirl of nut butter.
    • Chill Time: For the best texture, let your parfaits chill for at least an hour. But honestly, overnight is even better! This gives the chia seeds more time to absorb the liquid and get that pudding-like consistency.
    • How to Store: Store chia seed parfaits in airtight jars or containers in the refrigerator for up to 3 days.
    • Not a Fan of the Texture? I love the pudding-like consistency, but adding some crunchy ingredients like granola and chopped nuts can help balance it and make it even more tasty!
