Ingredients

  • 16 ounces medium deveined shrimp
  • 1/2 cup all-purpose flour or gluten-free as needed
  • 2 large eggs
  • 3/4 cup cauliflower breadcrumbs or gluten-free panko
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 cup avocado oil

Sauce

  • 1/4 cup plain Greek yogurt or mayo
  • 3-4 Tablespoons sweet chili sauce
  • 1/2 medium lime, juiced

For Serving

  • 2 cups cooked rice
  • 1 medium cucumber sliced
  • 1 1/2 cups shelled edamame
  • 2 small mangos sliced or cubed

Instructions

  • Add the flour to a shallow dish.
  • Whisk the eggs into another shallow dish and set aside.
  • In a third dish, add the breadcrumbs, paprika, garlic, and salt and whisk to combine.
  • Dip each shrimp in the flour, then egg, then the breadcrumb mixture and set aside. Repeat with all shrimp.
  • Heat the oil in a large skillet over medium heat. Once hot, fry the shrimp on both sides for about 2-3 minutes or until golden brown.
  • Whisk together the ingredients for the sauce.
  • Assemble the bowls with the rice, veggies, edamame, mango, fried shrimp, and a drizzle of the sauce on top. I also like some cilantro or green onion on top and red pepper flakes for spice!
