Festive, sweet, and such a fun treat! I love these Gingerbread Cookie Protein Bites for a healthy protein snack that's perfect for the holiday season. The flavors of a warm gingerbread cookie topped with white chocolate icing, but turned into a healthy, everyday snack - it doesn't get any better than that! Make a big batch of these easy bites and keep them in the fridge for healthy snacking all week.

Instructions

  • Combine the protein bites ingredients in a mixing bowl and stir until smooth.
  • Roll into balls and freeze for 15 minutes.
  • Melt the white chocolate topping ingredients together in the microwave for about 30-45 seconds, stirring every 15 minutes.
    TIP: If the mixture is still too thick, mix in about 1/2 teaspoon of extra coconut oil.
  • Dip each protein bite into the white chocolate and sprinkle with a little bit of cinnamon.
  • Freeze for another 15-20 minutes and enjoy!
