Gingerbread Cookie Protein Bites Recipe
These Gingerbread Cookie Protein Bites are SO easy to make and one of my current favorite snacks! They’re perfect for pre or post-workouts, snacking throughout the day, and taking on-the-go. Just mix the “dough” in a mixing bowl, roll into balls, coat in the white chocolate topping, and freeze to set. Then store them in the fridge! SO easy. These sweet treats are vegan, gluten-free, dairy-free, and festive!

Ingredients/Substitutions
You’ll only need 6 ingredients for the protein bites and 2 ingredients for the white chocolate topping. Here’s what you’ll need to get started:
Protein Bites
- Almond Butter – Cashew butter, sun butter, or granola butter work great, too!
- Maple Syrup
- Oat Flour
- Almond Flour
- Vanilla Protein Powder
- Gingerbread Spice – Cinnamon, ginger, allspice, nutmeg, and cloves.
White Chocolate Topping (Optional)
- Vegan White Chocolate Chips
- Coconut Oil
TIP: If you want to add a touch of white chocolate instead of coating the protein bites, feel free to just mix in a few mini white chocolate chips instead!
How to Make Gingerbread Cookie Protein Bites
Making protein bites is one of my favorite ways to meal prep healthy snacks on hand! And these Gingerbread Cookie Protein Bites are SO yummy. Here’s how to put them together:
- Mix almond butter, maple syrup, oat flour, almond flour, protein powder, and gingerbread spice together in a large mixing bowl.
- Roll into balls and place on a baking sheet lined with parchment paper.
- Freeze for about 10-15 minutes to set.
- Meanwhile, melt the white chocolate chips and coconut oil together until smooth.
- Dip each ball in the white chocolate mixture and top with cinnamon.
- Freeze for another 15-20 minutes to set and enjoy!

How to Store
Gingerbread Protein Bites are best stored in an airtight container in the refrigerator. They can last for up to 7-10 days!
You can also make a double batch and freeze some for later. To freeze, place them in an airtight container and store for up to 3 months. When ready to enjoy, place them in the fridge to thaw for a few hours!

Gingerbread Cookie Protein Bites
Ingredients
Protein Bites
- 3/4 cup almond butter
- 2 Tablespoons maple syrup (or to taste)
- 1/4 cup oat flour
- 1/4 cup almond flour
- 1/4 cup vanilla protein powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/8 teaspoon allspice
- 1/8 teaspoon nutmeg
- 1/8 teaspoon cloves
White Chocolate Topping (Optional)
- 1/4 cup white chocolate chips
- 1/2 teaspoon coconut oil
Instructions
- Combine the protein bites ingredients in a mixing bowl and stir until smooth.
- Roll into balls and freeze for 15 minutes.
- Melt the white chocolate topping ingredients together in the microwave for about 30-45 seconds, stirring every 15 minutes. TIP: If the mixture is still too thick, mix in about 1/2 teaspoon of extra coconut oil.
- Dip each protein bite into the white chocolate and sprinkle with a little bit of cinnamon.
- Freeze for another 15-20 minutes and enjoy!
