These Gluten-Free Monster Cookies are such a treat! Made with creamy peanut butter, brown sugar, gluten-free flour, oats, and a mix of dairy-free chocolate chips, white chocolate chips, and coated chocolate candy, these fun cookies are perfectly crisp on the outside and chewy in the middle. This recipe is gluten-free, dairy-free, and can easily be made vegan!
Whisk the softened vegan butter, granulated sugar, brown sugar, eggs, vanilla, and peanut butter together until smooth.
Add in the gluten-free flour, rolled oats, baking soda, and salt.
Mix just until combined.
Mix in the chocolate candy, chocolate chips, and white chocolate chips.
Scoop the cookie dough on to a baking sheet lined with parchment paper.
Bake for 11-12 minutes per batch.
Let cool and enjoy!

Feel free to stir in about 1-2 Tablespoons of maple syrup to the cookie dough. While it isn't necessary, it can add a little bit extra moisture, flavor, and sweetness to the cookies!
While this recipe is gluten-free and dairy-free, it can also be made with regular flour and regular butter
The creamier the peanut butter, the better.
If you have the time, chill the dough for at least 30 minutes before baking!
