Healthy Blueberry French Toast
Sweet, hearty, and full of good things, this Healthy Blueberry French Toast Casserole is so yummy! Made with low-carb bread, plant-based milk, and full of warm sweet maple cinnamon flavors combined with blueberries, this healthier breakfast casserole has become one of my favorites. It's so easy to put together and the perfect dairy-free breakfast treat!

10-12 slices low-carb bread 6 large eggs 1 3/4 cups plant-based milk 1 teaspoon ground cinnamon 1/2 cup maple syrup 1 teaspoon vanilla extract 1 cup fresh or frozen blueberries Toppings (Optional) brown sugar powdered sugar fresh blueberries
Preheat the oven to 375 degrees F.
Lightly toast the bread while the oven preheats and prep all other ingredients (if the bread was previously frozen).
Whisk the eggs, milk, cinnamon, syrup, and vanilla in a mixing bowl.
Tear the bread into smaller pieces and place in a casserole dish.
Pour the egg mixture over the bread. Use a spoon to turn the bread and fold the mixture in evenly.
Fold in the blueberries, then add a sprinkle of brown sugar topping (optional).
Bake for 55-60 minutes.
Add fresh blueberries and powdered sugar on top (optional). Enjoy!
