Blueberry French Toast Casserole Recipe
I love french toast, but sometimes the effort of dipping and cooking each individual toast feels like a lot, especially on busy weekdays. I’ve become so obsessed with this blueberry french toast casserole! It’s so easy to just tear the bread up and put it in a casserole dish, pour the whisked egg mixture over everything, and fold in fresh or frozen blueberries. Add the optional brown sugar topping and bake!
This healthier breakfast casserole is great topped with a dollop of Greek yogurt, your favorite nut butter, fresh berries, or anything else you want. I love it for weekend brunch, but I also love how easy it is for weekday breakfasts!

Ingredients/Substitutions
Low-Carb Bread – Or any type of bread! Gluten-free bread, challah, brioche, or whole wheat bread are all delicious options.
Eggs – You’ll need 6 large eggs for this recipe!
Plant-Based Milk – Soy milk, almond milk, oat milk, or regular dairy milk.
Cinnamon/Vanilla Extract – These add so much flavor to this french toast casserole recipe!
Maple Syrup – The maple syrup adds depth of flavor and the perfect amount of sweetness.
Blueberries – Fresh or frozen – your choice!
Brown Sugar (optional) – While totally optional, I love the way a little bit of brown sugar sprinkled over the top before baking adds a touch of sweet and the perfect texture.
Toppings (optional) – Powdered sugar and fresh blueberries bring this casserole to another level! You can also serve it with Greek yogurt, a side of eggs, and fresh fruit.
How to Make a Blueberry French Toast Casserole
This healthy Blueberry French Toast Casserole could not be any easier to make! It only takes a few minutes of prep time, then just bake it and enjoy. Here’s how to make this recipe:
- Whisk eggs, milk, cinnamon, syrup, and vanilla together in a mixing bowl.
- Tear the bread into small pieces and place in a casserole dish.
- Pour the egg mixture evenly over the bread.
- Fold in the fresh or frozen blueberries.
- Add the brown sugar topping (optional) and bake for 55-60 minutes!
Making Ahead
The best way to make a french toast casserole ahead of time is to prep the bread in the casserole dish and cover. Prep the egg mixture and cover in a separate container. Store overnight in the fridge, then pour over the bread, fold in the berries, and bake in the morning!
You can also fully prep the breakfast casserole the night before, cover, and then just bake in the morning. However, this results in a bit of a soggy texture since the bread (depending on the type of bread you’re using) will soak up quite a bit of the egg mixture. It still tastes delicious, though!

Storing Leftovers
To store, let the Healthy Blueberry French Toast Casserole cool and place in an airtight container. Keep in the refrigerator for up to 3-4 days! To reheat, simply warm it up in the microwave for a few seconds and add your favorite toppings when ready to enjoy.

- 10-12 slices low-carb bread
- 6 large eggs
- 1 3/4 cups plant-based milk
- 1 teaspoon ground cinnamon
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Toppings (Optional)
- brown sugar
- powdered sugar
- fresh blueberries
Instructions
- Preheat the oven to 375 degrees F.
- Lightly toast the bread while the oven preheats and prep all other ingredients (if the bread was previously frozen).
- Whisk the eggs, milk, cinnamon, syrup, and vanilla in a mixing bowl.
- Tear the bread into smaller pieces and place in a casserole dish.
- Pour the egg mixture over the bread. Use a spoon to turn the bread and fold the mixture in evenly.
- Fold in the blueberries, then add a sprinkle of brown sugar topping (optional).
- Bake for 55-60 minutes.
- Add fresh blueberries and powdered sugar on top (optional). Enjoy!
