Healthy Buster Bars
These Healthy Buster Bars are the BEST homemade frozen treat! They're made with Greek yogurt, peanut butter, protein powder, and a little bit of maple syrup, topped with chopped peanuts, and then dipped into a dark chocolate coconut oil magic shell that brings it all together. Pop them in the freezer and they're ready for a healthy snack or dessert any time of the day!

Mix the yogurt, peanut butter, maple syrup, and protein powder in a mixing bowl until smooth.
Scoop 5-6 large dollops of the mixture onto a baking sheet lined with parchment paper and flatten them into a round shape.
Top each one with chopped peanuts and chocolate chips (optional).
Press a popsicle stick into each one and freeze for at least 30 minutes (but can be frozen overnight).
Melt the chocolate chips and coconut oil together in the microwave, mixing every 30 seconds for about 1 - 1.5 minutes.
Dip each bar into the chocolate and use a spoon to coat evenly.
Place each bar back onto the baking sheet and top with a sprinkle of flaky salt (optional).
Freeze for another 15 minutes, then enjoy!
This recipe can make 5-6 large buster bars or 7-8 smaller ones.
