Healthy Buster Bars

These Healthy Buster Bars are the BEST homemade frozen treat! They're made with Greek yogurt, peanut butter, protein powder, and a little bit of maple syrup, topped with chopped peanuts, and then dipped into a dark chocolate coconut oil magic shell that brings it all together. Pop them in the freezer and they're ready for a healthy snack or dessert any time of the day!

Instructions

  • Mix the yogurt, peanut butter, maple syrup, and protein powder in a mixing bowl until smooth.
  • Scoop 5-6 large dollops of the mixture onto a baking sheet lined with parchment paper and flatten them into a round shape.
  • Top each one with chopped peanuts and chocolate chips (optional).
  • Press a popsicle stick into each one and freeze for at least 30 minutes (but can be frozen overnight).
  • Melt the chocolate chips and coconut oil together in the microwave, mixing every 30 seconds for about 1 - 1.5 minutes.
  • Dip each bar into the chocolate and use a spoon to coat evenly.
  • Place each bar back onto the baking sheet and top with a sprinkle of flaky salt (optional).
  • Freeze for another 15 minutes, then enjoy!

  • This recipe can make 5-6 large buster bars or 7-8 smaller ones.
