Mocha Latte Overnight Oats

I've been making these Mocha Latte Overnight Oats for YEARS and they're still one of my favorite ways to start the day! They're sweet, creamy, and have the perfect kick of coffee balanced with chocolatey goodness. As a busy mom of 3, I love that they can be prepped in just 5 minutes and have 26 grams of protein per serving!

Ingredients

  • 1 cup rolled oats
  • 1 shot espresso or 1/4 cup strongly brewed coffee
  • 1 scoop chocolate protein powder or 1/4 cup
  • 1 cup milk of choice
  • 1 teaspoon vanilla extract
  • 2 Tablespoons maple syrup

Topping (Optional)

Instructions

  • Divid the overnight oats ingredients into two jars and mix.
  • Add lids and refrigerate overnight.
  • In the morning, melt the chocolate chips and oil together until smooth.
  • Slowly whisk in the yogurt and cocoa powder.
  • Divide the topping between the jars and spread it to create a thin layer.
  • Serve and enjoy!
