Pomegranate Pecan Breakfast Parfait

This Pomegranate Pecan Cottage Cheese Parfait is sweet, creamy, and has 18 grams of protein, making it one of my favorite meal prep breakfasts. With layers of whipped cottage cheese, crunchy pecan streusel, and juicy pomegranate arils, it provides delicious fall flavors and tastes like dessert but comes together with hardly any cooking. Perfect for busy weekdays, holiday mornings, or an easy weekday treat, this parfait recipe is nourishing, delicious, and ready to eat in minutes!

Ingredients

  • 1 cup cottage cheese blended
  • 1 Tablespoon maple syrup
  • 1 teaspoon vanilla

Pecan Streusel Topping

  • 1/4 cup chopped or halved pecans
  • 1/4 cup rolled oats
  • 1 Tablespoon almond flour
  • 1/4-1/2 teaspoon cinnamon
  • 1 Tablespoon maple syrup
  • 1-2 Tablespoons hemp hearts
  • 1 Tablespoon melted coconut oil or butter

Topping

Instructions

  • Preheat the oven 350°F 
  • Mix the ingredients for the pecan streusel together and place on a small baking sheet lined with parchment paper.
  • Crumble the mixture so that it lays flat and is evenly distributed.
  • Bake for 5 minutes, and set aside to cool.
  • Meanwhile, blend the cottage cheese, maple syrup, and vanilla until smooth in a small cup blender.
  • Divide the cottage cheese mixture between two parfait glasses or jars, then add the streusel over each one.
  • Top with pomegranate arils and enjoy!
