Ingredients

  • 2 mahi-mahi fillets
  • 1/2 cup dry quinoa
  • 1 cup chopped lettuce
  • 1 cup chopped red cabbage
  • 1/4 cup GOODFOODS Tableside ® Chunky Guacamole
  • 1/4 cup crushed tortilla chips optional
  • cilantro to taste

Instructions

  • Bake the fillets according to package directions.
  • While the fillets are baking, cook the quinoa according to directions.
  • In 2 bowls, combine the chopped lettuce, red cabbage, fish fillets, cooked quinoa, guacamole, crushed tortilla chips, and cilantro.
  • Serve and enjoy!
