Mahi-Mahi Taco Bowls
- 2 mahi-mahi fillets
- 1/2 cup dry quinoa
- 1 cup chopped lettuce
- 1 cup chopped red cabbage
- 1/4 cup GOODFOODS Tableside ® Chunky Guacamole
- 1/4 cup crushed tortilla chips optional
- cilantro to taste
Bake the fillets according to package directions.
While the fillets are baking, cook the quinoa according to directions.
In 2 bowls, combine the chopped lettuce, red cabbage, fish fillets, cooked quinoa, guacamole, crushed tortilla chips, and cilantro.
Serve and enjoy!
