Ingredients

Blueberry Banana Baked Oatmeal

  • 2 1/2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 Tablespoons chia seeds optional
  • 2 Tablespoons flax seeds optional
  • 1/4 teaspoon salt
  • 2 medium bananas mashed
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 1/2 cups almond milk or milk of choice
  • 1 teaspoon vanilla
  • 1 cup blueberries frozen or fresh

Topping (optional)

  • 1 medium banana sliced
  • 2 Tablespoons brown sugar
  • 1/4 cup chopped walnuts
  • extra blueberries

Instructions

  • Preheat the oven to 350 degrees F.
  • Mix together the rolled oats, baking powder, baking soda, cinnamon, chia seeds, flax seeds, and salt in a large mixing bowl.
  • Mash the bananas in a separate bowl until smooth.
  • Add in the eggs, maple syrup, almond milk, and vanilla.
  • Whisk until the liquid ingredients are smooth.
  • Pour the liquid ingredients into the dry ingredients and mix just until well combined.
  • Add in the blueberries and mix.
  • Spray a 9×9 inch or 11×7 inch casserole dish (or baking pan) with oil and pour the batter into the dish.
  • Add any of the optional toppings (banana, brown sugar, walnuts, and/or extra blueberries).
  • Bake for about 40-45 minutes.
  • Let cool for 5-10 minutes, then cut into bars and enjoy!
