Healthy Peanut Butter Cup

Snickers Rice Cakes

  • 1 rice cake
  • 1 Tablespoon creamy peanut butter
  • 1 Tablespoon vanilla Greek yogurt
  • 1/2 Tablespoon vanilla protein powder
  • 1-2 Tablespoon dark chocolate chips
  • 1/4 teaspoon coconut oil
  • flaky sea salt for topping
  • 1 teaspoon chopped peanuts for topping
  • 1-2 teaspoons chopped dates for topping

Strawberry Cheesecake Rice Cake

  • 1 rice cake
  • 1 Tablespoon cashew butter
  • 1 Tablespoon vanilla Greek yogurt
  • 1 teaspoon maple syrup
  • 1/4 cup frozen strawberries thawed and mashed
  • 1-2 Tablespoon white chocolate chips
  • 1/4 tsp coconut oil
  • 1 teaspoon graham cracker crumbs for topping

Healthy Samoa Cookies

  • 1 rice cake
  • 1 Tablespoon creamy almond butter
  • 1-2 Tablespoon chopped dates soaked
  • 2 teaspoons shredded coconut
  • 1-2 Tablespoon dark chocolate chips
  • 1/4 tsp coconut oil
  • flaky sea salt for topping

Instructions

Healthy Peanut Butter Cup

  • Top the rice cake with peanut butter and banana slices.
  • Mix the chocolate chips and coconut oil in the microwave, stirring until smooth.
  • Next, spread the melted chocolate into a thin layer over the rice cake and immediately sprinkle a little flaky sea salt over it.
  • Place in the freezer for about 10-15 minutes, then enjoy!

Snickers Rice Cakes

  • Mix the yogurt and protein powder together.
  • Top each rice cake with peanut butter and yogurt mixture, then place in the freezer for about 10-15 minutes.
  • Meanwhile, melt the chocolate chips and coconut oil.
  • Top the rice cakes with a thin layer of the chocolate mixture and immediately add flaky salt, peanuts, and dates.
  • Freeze for 15-20 minutes to set, then enjoy!

Strawberry Cheesecake Rice Cake

  • Mix the cashew butter, yogurt, and maple syrup.
  • Spread over the rice cake and top with mashed strawberries.
  • Melt the white chocolate chips and coconut oil together, then drizzle over the entire rice cake.
  • Top with graham cracker crumbs and freeze for about 10-15 minutes to set. Enjoy!

Healthy Samoa Cookies

  • Spread the almond butter over the rice cake and top with chopped dates and shredded coconut.
  • Melt the chocolate chips and coconut oil together for 15-30 seconds in the microwave, then drizzle over the rice cake.
  • Sprinkle flaky sea salt or more coconut over the entire thing and place in the freezer for about 10-15 minutes to set. Enjoy!
