This rice cake recipe has gone viral not once, but TWICE in the past year and I can’t get enough of it! It’s the perfect snack for when I’m craving chocolate but want to keep things healthy. Since it’s gone viral, I’ve adjusted the ingredients a bit for nutritional purposes, but feel free to really make these your own! They can be as indulgent or healthy as you want. You can’t go wrong with this rice cake recipe!

Healthy Peanut Butter Cup Rice Cake
These rice cakes taste like an actual peanut butter cup! They’re SO good. Here’s what you’ll need and how to make them (or jump to recipe):
Ingredients
- Rice Cake
- Creamy Peanut Butter
- Banana (sliced)
- Dark Chocolate Chips
- Coconut Oil
- Flaky Sea Salt (for topping)
How to Make
- Top rice cake with peanut butter and banana.
- Melt chocolate chips and coconut oil in the microwave.
- Spread melted chocolate into a thin layer over the rice cake and add sea salt.
- Freeze for 10-15 minutes and enjoy!

- Rice Cake

- Dark Chocolate Chips
