Savory Vegetarian Waffles

I've been obsessed with these savory Vegetarian Jalapeño Bacon Waffles for YEARS and they're still one of my favorite easy breakfast recipes! As a busy mom of 3, I'm always looking for fun and easy breakfast ideas that are flavorful but don’t require hours in the kitchen. These vegetarian waffles are the perfect mix of savory, spicy, and just a touch of sweet!

Ingredients

  • 1/4 cup butter, melted
  • 3/4 cup milk
  • 1 Tablespoon honey
  • 2 large eggs
  • 1 1/2 cups oat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetarian bacon cooked and crumbled
  • 1/4 cup freshly diced jalapeños
  • 1/3 cup shredded cheddar cheese

Instructions

  • Preheat a greased waffle iron on medium heat.
  • Whisk together the butter, honey, milk, and eggs.
  • Whisk in the flour, baking powder, and salt.
  • Fold in the crumbled bacon, diced jalapenos, and cheddar cheese.
  • Add about 1/3 cup of batter to the waffle maker (the exact amount will depend on the size of your waffle maker) and cook for 4-6 minutes on each side (or the time according to the waffle maker's instructions).
  • Repeat with the remaining batter.
  • Serve with more bacon, avocado, sliced jalapeno, and syrup. Enjoy!

Notes

  • Cook the bacon first (if necessary) so that it's crispy and crunchy before tossing with the other ingredients
  • If you don't like spicy food you can cut the jalapeno down by half or omit it altogether.
  • I like to wear gloves when chopping the jalapeno it helps if you have sensitive skin or are likely to rub your eyes later on!
  • Be sure to grease your waffle iron in order to keep the waffles from sticking!
  • Make a big batch of these waffles in advance, then keep them in the freezer and reheat them whenever you're craving one. I love keeping them on hand for quick & easy breakfasts!
  • This recipe makes 7-8 total waffles.
