What is Vegetarian Bacon?
First of all, let’s discuss this magic bacon that allows us to create vegetarian waffles. I can honestly say I’ve never had such bacon-tasting non-bacon! You guys, it’s amazing. Allow me to introduce you to the savory, crunchy, and smoky Sweet Earth Benevolent Bacon. It’s a plant-based bacon made from soy, wheat, delicious herbs and is smothered in a delicious hickory sage sauce and tastes heavenly!
Combined with the spicy flavor of these jalapeños, we have a win! To be honest, I’m not the type of person that loves spicy. I mean, I do like it, but I can’t handle a TON of spicy.
If you’re a spicy food fanatic, be sure to keep some of the jalapeño seeds in the chopped jalapeños to take it up a notch! In this case, I completely removed the seeds. Lots of flavor, but only mildly spicy! 😉

How to Store Vegetarian Bacon Waffles
Also, these Jalapeño Vegetarian Bacon Waffles are the best ever not only because they’re UHmazing, but because you can make a billion of them and freeze them! Just remove from the freezer when you need them and pop them in the toaster or in a hot oven to warm through.

Top Tips for Making Jalapeno Vegetarian Bacon Waffles
- Cook the bacon first so it’s crispy and crunchy before tossing with the other ingredients
- If you don’t like spicy food you can cut the jalapeno down by half or omit it altogether
- I like to wear gloves when chopping the jalapeno it helps if you have sensitive skin or are likely to rub your eyes later on
- Top the waffles with extra vegetarian bacon or maple syrup
- Store the waffles in airtight containers or in the freezer for later

Vegetarian Jalapeno Bacon Waffles
Ingredients
- 1/4 cup finely chopped jalapeño
- 3 slices Sweet Earth Benevolent Bacon
- 4 eggs
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla
- 2 Tbsp coconut oil
- 1 1/4 cup almond flour
- 1/4 tsp baking soda
- 1 packet stevia
- pinch of salt
Instructions
- Finely chop the jalapeño (using gloves). Set aside.
- Cook the bacon slices according to directions. Finely chop the bacon into small bits.
- Mix all of the ingredients together in a mixing bowl and preheat your waffle maker.
- Cooke each set of waffles for a few minutes. Top with syrup (optional), serve, and enjoy!
