Snickers Protein Bites
These Snickers Protein Bites are the BEST sweet treat for whenever you're craving something chocolatey! Made with a protein peanut butter crust, whipped cottage cheese filling, and a chocolate sea salt topping, every bite is so good. I also love that 2 of these protein bites have 8 grams of protein and less than 100 calories! Make a big batch of this super easy treat and keep these on hand for anytime you're craving one.

Mix the protein powder, PB2, and melted coconut oil in a small bowl.
Evenly divide the crust into a silicone mini muffin pan (or into a mini muffin tin lined with paper). Press the crust into each cavity.
Blend the cottage cheese, maple syrup, vanilla, PB2, and protein powder until smooth.
Pour the filling over the crust, dividing evenly into each muffin pan cavity.
Melt the chocolate chips and coconut oil in the microwave for about 45 seconds, stirring every 15 seconds until smooth.
Spoon the chocolate over each protein bite in a very thin layer. Immediately top with chopped peanuts and flaky salt (optional).
Set in the freezer for 15-20 minutes, then enjoy!
If using a silicone muffin pan, I like to set the entire pan on a baking sheet for a sturdy structure while moving it to and from the freezer.
The chocolate topping is optional! You can always just mix in chocolate chips instead.
These protein bites are best stored in the freezer in an airtight container. When ready to enjoy, let them thaw for a few minutes first!
This recipe makes about 24 protein bites (1 serving = 2 bites). However, you could also make 12 larger protein bites instead!
