Strawberries and Cream Overnight Oats

Strawberry Overnight Oats with a creamy topping that's truly next-level! Made in just 5 minutes with 22 grams of protein, I could not be more obsessed with this easy healthy breakfast recipe. I've been making these oats for YEARS and they're still one of my top go-to recipes! If you've been looking to add more protein to your daily routine and want a quick breakfast idea that can be prepped ahead of time, these Strawberries & Cream Overnight Oats are so good.

Ingredients

Strawberry Overnight Oats

  • 1 cup rolled oats
  • 1 Tablespoon chia seeds
  • 2 Tablespoons almond butter
  • 1 cup milk or almond milk
  • 2-3 Tablespoons maple syrup or to taste
  • 1/2 cup vanilla Greek yogurt
  • 6-7 medium strawberries fresh or frozen and thawed

Cream Topping

  • 1 Tablespoon white chocolate chips
  • 1/2 teaspoon coconut oil
  • 1/4 cup vanilla Greek yogurt

Instructions

  • Mix the rolled oats, chia seeds, almond butter, milk, maple syrup, and yogurt in two jars.
  • Slice the strawberries and mix into the jars.
  • Melt the white chocolate chips and coconut oil together in the microwave for 30-45 seconds, stirring every 15 seconds.
  • Slowly whisk in the yogurt until smooth.
  • Spoon and smooth the cream topping over each overnight oats jar.
  • Add lids and refrigerate overnight.
  • Enjoy in the morning!

Notes

  • Optional: I love thawing frozen strawberries and mashing them into a "jam" texture, then swirling it into the cream topping. It's SO good!
  • To meal prep a big batch, mix the overnight oats base in a large mixing bowl and divide into jars. Make the same batch portion of the cream topping and add it on top of the oats, then cover with airtight lids. Store these oats in jars with lids or airtight containers for up to 4 days!
