Tiramisu Overnight Oats

These Tiramisu Overnight Oats are rich and creamy and have that subtle coffee and cocoa kick that we all know and love. They're made with healthy ingredients and higher in protein, making them the BEST treat for breakfast, brunch, or dessert! Every bite is full of chocolatey coffee oats, and there's nothing like that light and fluffy white chocolate yogurt topping. You will LOVE this recipe!

Ingredients

Overnight Oats

  • 1 cup rolled oats
  • 1 Tablespoons chia seeds
  • 1/4 cup chocolate protein powder
  • 1/2 cup cashew milk or any plant-based milk
  • 2 Tablespoons maple syrup or to taste
  • 2 shots espresso about 1 ounce
  • 1/2 cup vanilla Greek yogurt

Topping (Optional)

  • 1 Tablespoons white chocolate chips
  • 1/2 teaspoon coconut oil
  • 1/4 cup vanilla Greek yogurt
  • 1 teaspoon cocoa powder

Instructions

  • Divide the oats, chia seeds, protein powder, milk, syrup, espresso, and 1/2 cup of yogurt into two jars.
  • Mix until even.
  • Melt the white chocolate chips and coconut oil in the microwave, stirring every 30 seconds until smooth.
  • Slowly add the yogurt into the white chocolate mixture, 1 Tablespoon at a time, stirring until smooth.
  • Smooth the topping over each overnight oats jar and lightly dust with cocoa powder.
  • Add airtight lids and refrigerate overnight, then enjoy in the morning!

Notes

  • Feel free to just add white chocolate chips into the overnight oats and skip the yogurt topping, if desired!
  • This recipe calls for brewed espresso, however, you can also use the same amount of strongly brewed coffee. Another option is to mix 2 to 2.5 Tablespoons of espresso powder and about 2 ounce of hot water!
