Vegan Chia Seed French Toast

French Toast 1 1/2 cups unsweetened almond milk 3 teaspoons chia seeds 2 Tablespoons maple syrup 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 6 slices whole grain or sprouted bread vegan butter for cooking Peach Chia Seed Compote: 1 1/2 cups frozen peach slices 2 Tablespoons maple syrup 1/2 teaspoon vanilla extract 1 Tablespoon chia seeds
Whisk the milk, chia seeds, maple syrup, vanilla, cinnamon, and nutmeg together. Let sit for about 7-10 minutes.
Heat a non-stick pan with vegan butter.
Dip a slice of bread in the mixture, letting it soak up the liquid for about 30 seconds on each side.
Cook for 1-2 minutes on each side in the pan.
Repeat until all of the bread is done.
Meanwhile, heat the peach slices over medium heat until they completely thaw and begin to soften (about 10 minutes).
Add the syrup and turn heat to high, until syrup begins to slightly boil.
Add the vanilla and continue cooking, mashing the peach slices a little bit.
Remove from heat, stir, and add the chia seeds.
Serve over the french toast and enjoy!
Use any type of vegan bread you want! I love whole wheat bread, sourdough, or sprouted bread. Even gluten-free bread slices work great!
Top with fresh fruit, summer berries, coconut whipped cream, or extra maple syrup.
Don't feel like making your own peach compote? Feel free to use store-bought compote or jam!
