Vegan French Toast
This recipe is a variation of my Healthy French Toast, but made vegan with chia seeds, plant-based milk, and vegan butter. It’s flavorful, sweet, and has the best French toast texture! Topped with a peach chia seed compote, this recipe is full of nutrition and the perfect vegan summer brunch treat.

Ingredients
Vegan French Toast
- Unsweetened Almond Milk – Oat milk, soy milk, coconut milk, or any type of plant-based milk works great.
- Chia Seeds
- Maple Syrup – Date syrup is a delicious alternative.
- Vanilla Extract
- Cinnamon/Nutmeg
- Whole grain or Sprouted Bread
- Vegan Butter (for cooking)
Peach Compote Recipe
- Frozen Peach Slices – Fresh peaches work great too, just watch the cooking time since they will cook faster than frozen. It’s also important to peel them before cooking!
- Maple Syrup
- Vanilla Extract
- Chia Seeds

How to Make Vegan Chia Seed French Toast?
It’s so easy to make this Vegan Chia Seed French Toast! Here’s how to make the easy recipe:
1. Whisk the Chia Seed “Batter”
The batter mix makes all the difference! Made with almond milk, maple syrup, chia seeds, vanilla, cinnamon, and nutmeg, simply whisk it together and let it sit for 7-10 minutes to thicken.
2. Cook the French Toast
Dip each slice of bread in the chia seed mixture, then cook in a non-stick skillet on each side.
3. How to Make Peach Chia Seed Compote
This Peach Chia Seed Compote is SO good! Simply heat up frozen peach slices and cook with maple syrup and vanilla. Remove from heat and add chia seeds to thicken. Add over the Vegan French Toast and enjoy!

Tips for Making Vegan French Toast
- Use any type of vegan bread you want! I love whole wheat bread, sourdough, or sprouted bread. Even gluten-free bread slices work great!
- Top with fresh fruit, summer berries, coconut whipped cream, or extra maple syrup.
- Don’t feel like making your own peach compote? Feel free to use store-bought compote or jam!
How to Store Chia Seed French Toast
Let the French Toast cool completely, then place in an airtight container and keep in the refrigerator for 3-4 days. You can also make a big batch of this recipe to meal prep it for the week ahead!

Vegan Chia Seed French Toast

Ingredients
French Toast
- 1 1/2 cups unsweetened almond milk
- 3 teaspoons chia seeds
- 2 Tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 6 slices whole grain or sprouted bread
- vegan butter (for cooking)
Peach Chia Seed Compote:
- 1 1/2 cups frozen peach slices
- 2 Tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1 Tablespoon chia seeds
Instructions
- Whisk the milk, chia seeds, maple syrup, vanilla, cinnamon, and nutmeg together. Let sit for about 7-10 minutes.
- Heat a non-stick pan with vegan butter.
- Dip a slice of bread in the mixture, letting it soak up the liquid for about 30 seconds on each side.
- Cook for 1-2 minutes on each side in the pan.
- Repeat until all of the bread is done.
- Meanwhile, heat the peach slices over medium heat until they completely thaw and begin to soften (about 10 minutes).
- Add the syrup and turn heat to high, until syrup begins to slightly boil.
- Add the vanilla and continue cooking, mashing the peach slices a little bit.
- Remove from heat, stir, and add the chia seeds.
- Serve over the french toast and enjoy!
