Cauliflower Pizza Casserole (Keto Recipe)
Casseroles are the way to my heart, ya’ll. They’re so easy to just put together and bake – it doesn’t get any better than that! Especially when you make a casserole that’s healthy, low-carb, and so full of delicious cheesy pepperoni pizza flavors and textures. I’m obsessed!
This Cauliflower Pizza Casserole is one of my favorites for busy weeknights. You can also swap out so many of the ingredients and truly make it your own. Even the kiddos love this one!

Ingredients/Substitutions
The ingredients for this recipe are simple and easy to find. Feel free to adjust to your own taste and dietary needs!
- Cauliflower Florets – Fresh is best, as frozen could add too much water.
- Avocado Oil – Olive oil works great, too.
- Sliced Mushrooms
- Diced Bell Pepper – Any color is great!
- Seasoning – Dried basil, oregano, thyme, rosemary, and salt. Feel free to adjust to taste.
- Low-Carb Marinara Sauce – No sugar added is the best way to go!
- Uncured Pepperoni
- Shredded Mozzarella Cheese
- Grated Parmesan Cheese

How to Make a Low-Carb Cauliflower Pizza Casserole
I love how quickly and easily this delicious casserole comes together! It’s truly perfect for busy weeknight. Here’s how to make Keto Pizza Casserole:
- Lightly steam the cauliflower, then drain and pat dry.
- Chop the cauliflower into very small florets (almost like cauliflower rice).
- Sauce the mushrooms, then combine with the cauliflower, diced bell pepper, and seasoning.
- Layer the casserole dish with marinara sauce, veggie mixture, pepperoni, and mozzarella.
- Repeat the layers, then add parmesan on top.
- Bake and enjoy!
TIP: After baking, let the casserole cool for about 10 minutes to allow the casserole base to thicken a bit.

How to Store Leftovers
After letting the casserole cool, store leftovers in a glass airtight container (to prevent staining) and add a lid. Keep in the refrigerator for 3-5 days, or store in the freezer for up to 3 months!
To reheat, place it in the microwave and heat for a few minutes until evenly warm.

Cauliflower Pizza Casserole (Keto Recipe)
Equipment
Ingredients
- 4 cups cauliflower florets
- 1 Tablespoon avocado oil
- 8 ounces sliced mushrooms
- 1 medium bell pepper, diced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1 teaspoon salt
- 1 1/2 cups marinara sauce (low-carb/no sugar added)
- 2-3 ounces uncured pepperoni
- 2 cups shredded mozzarella
- 1/3 cup Parmesan cheese
Instructions
- Cover the cauliflower with about 1 inch of water and microwave for 90 seconds (or heat on the stovetop).
- Drain and pat dry.
- Chop into very small florets. It should look a bit more like cauliflower rice than florets.
- Preheat the oven to 400 degrees F.
- Heat the oil in a pan and saute the mushrooms for 5-7 minutes until softened.
- Combine the cauliflower, mushrooms, diced bell pepper, and seasoning in a bowl.
- Add a layer of the marinara sauce to the bottom of a baking dish.
- Add in half of the cauliflower mixture, then a layer of sauce, half the pepperoni, half the mozzarella.
- Add in the remaining cauliflower, followed by the sauce, cheese, and pepperoni.
- Add parmesan and bake for 30 minutes.
- Serve with fresh basil and enjoy!
