- 1/4 cup milk (or unsweetened plant-based milk for less dairy)
- 2 cups shredded cheddar cheese
- 1/2 pound lean ground beef
- 4 ounces cream cheese
- 1/2 cup plain greek yogurt
- 1 10-ounce can rotel tomatoes and green chilies
- 1/2 packet taco seasoning (adjust seasoning to taste)
- cilantro, chopped tomatoes, bell pepper (for garnish)
Instructions
- Add the milk and shredded cheese to a pot on the stove. Heat over low heat or use a double boiler, and melt. Stir regularly to prevent burning.
- Meanwhile, add the ground beef to a skillet and cook over medium heat until cooked through.
- Add the cream cheese and yogurt to the cheese mixture and mix well until smooth and creamy.
- Add in the rotel and taco seasoning.
- Fold in the ground beef.
- Garnish with lots of fresh cilantro, chopped bell peppers and/or chopped tomatoes and serve.
