- Onions – I love the mild and sweet taste of yellow onions in this soup. If you don’t have them on hand, feel free to use shallots or white onion.
- Garlic – I love using store-bought minced garlic because it’s so convenient. Fresh garlic cloves work perfectly, too!
- Tomato Paste – Tomato paste is made by cooking down tomatoes into a concentrated, thick paste. It’s the perfect shortcut that brings a depth of flavor without a lot of time!
- Greek Yogurt – Many tomato soup recipes have heavy cream in them to mellow out the acidity of the tomatoes and add creaminess. I’ve used Greek yogurt instead which adds all the good stuff while also upping the protein and keeping the calories lower.
- Crushed Tomatoes – Canned crushed tomatoes are picked at the perfect ripeness and are so good in this soup. They make it easy to get that perfect tomato flavor without cooking fresh tomatoes for a long time.
- Basil – One of the heavenly matches in the food world is definitely tomatoes and basil! Adding fresh basil to the soup makes it so yummy.
- Chicken Broth – You can also use vegetable broth as well.
- Salt and Black Pepper
- Paprika – Don’t skip this ingredient! You will love how just a bit makes the soup taste so good.

How to Make Tomato Soup From Scratch
Homemade tomato soup is SO much better than store-bought! And this recipe method is incredibly easy for making it at home. Here’s how to make Easy Tomato Soup in just 35 minutes:
- Heat the olive oil in a Dutch oven and sauté the onions.
- Add in the garlic, then add the tomato paste and cook for about 1-2 minutes to let the flavor deepen.
- Whisk the Greek yogurt with 1/4 cup warm water to prevent curdling and whisk in all the remaining ingredients.
- Let simmer for about 5 minutes, then either transfer to a blender or use an immersion blender to blend until smooth.
- Transfer back to the pot, taste, and adjust flavors as desired.
- Garnish with a bit of cream, parmesan, and basil, and serve with your favorite rustic bread or grilled cheese!

You can do so much with a basic tomato soup recipe to switch things up or make it more to your liking! Here are some ideas:
Tomato Basil Soup – Probably my favorite easy variation upgrades! Add some extra freshly chopped basil about 5 minutes before the soup is done cooking. Then add even more on top for that delicious flavor!
Roasted Tomato Soup – Swap the can of crushed tomatoes for freshly roasted whole tomatoes and dice them into small pieces. Or use roasted tomatoes from a can instead!
Chicken Tomato Soup – Add cubed or shredded chicken about 5 minutes before the soup is done cooking for extra protein.
Tomato Vegetable Soup – I love adding in and sautéing chopped carrots or fresh broccoli at the beginning of the recipe for a delicious tomato soup with veggies!

- Add Protein – Grilled chicken, grilled shrimp, beans, and lentils would all be a delicious addition to the soup to up the protein a bit and make it even more filling.

- 2 Tablespoons olive oil
- 1 large yellow onion (diced)
- 1 Tablespoon minced garlic
- 2 Tablespoons tomato paste
- 1/2 cup plain Greek yogurt (room temperature + 1/4 cup warm water)
- 2 28-ounce cans crushed tomatoes
- 1/4 cup fresh chopped basil
- 1 cup chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes
- Optional Garnishes: cream (parmesan, fresh basil)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add in the diced onion and sauté for about 5-7 minutes.
- Add in the garlic and sauté for 1 more minute.
- Add the tomato paste and cook for about 1-2 minutes to let the flavor deepen.
- Whisk the Greek yogurt with 1/4 cup warm water to prevent curdling. It also helps to have the yogurt at room temperature before mixing with the water.
- Whisk in all the remaining ingredients to the pot.
- Let simmer for about 5 minutes, then either transfer to a blender or use an immersion blender to blend until smooth. If using a regular blender, blend in batches if needed and keep the lid slightly ajar so heat can escape. Start the speed on low!
- Transfer back to the pot, taste, and adjust flavors as desired.
- Garnish with a bit of cream, parmesan, and basil, and serve with your favorite rustic bread or grilled cheese!
