- Loosely chop the spinach and divide it on plates or in a large salad bowl.
- Add diced or sliced peaches, mozzarella, avocado, chopped walnuts, and cooked chicken.
- Combine the balsamic vinaigrette ingredients and shake them together in a mason jar or salad dressing shaker.

- 6-7 cups spinach (loosely chopped)
- 8 ounces mozzarella
- 1 large avocado
- 1/2 cup chopped walnuts
- 3-4 cups diced cooked chicken
Balsamic Vinaigrette
- 1 Tablespoon Dijon mustard
- 1/2 teaspoon minced garlic
- 1 Tablespoon honey (or agave syrup)
- 2 1/2 Tablespoons balsamic vinegar
- 1/4 cup olive oil
- 1/4 teaspoon salt
Instructions
- Loosely chop the spinach and add to plates or a large salad bowl.
- Add diced or sliced peaches, mozzarella, avocado, walnuts, and cooked chicken.
- Combine the balsamic vinaigrette ingredients in a salad shaker or mason jar and shake until smooth.

How to you prevent peaches’ turning brown when you make ahead?

I would probably just wait to add the peaches right before if you can, but if not then you can soak the diced or sliced peaches in lemon juice before adding them to the salad. It will change the flavor a bit, though!
