Peaches are everywhere in this little Texas town right now! We keep buying them from the farmers stands, but then forget about them and eventually remember after they’ve gone bad. It’s the saddest thing ever! Thankfully, I’ve found a way to put almost-expired peaches to good use ;).
These creamsicles are only 50 calories a piece and are the perfect, refreshing summer treat! Also, this recipe only has 3 ingredients. It doesn’t get much easier than this!
Peaches N’ Creamsicles:
1 Peach
1 Cup Lite or Silk Coconut Milk
1 Tbsp Honey
Wash peach thoroughly and peel off the skin with a potato peeler or knife. Cut the peach into 4 pieces, removing the seed. Set 1 piece aside. Combine and liquify the remaining 3 pieces of peach, coconut milk, and honey in a blender. Chop the set aside peach piece into small squares and mix into the liquid (do not blend! just mix in!). Pour into a popsicle mold
and freeze for 4-6 hours!
