How to Make Vegan Noodle Stir Fry
- Cook the noodles according to package directions.

- Saute the veggies in a large non-stick pan.
- Pour the sauce into the pan.
- Add the meatless protein option and cook until evenly warm!
Plant-Based Stir Fry Variations
Vegan Fried Rice – Make this recipe with delicious fried rice instead of noodles!
Vegetarian Stir Fry – Substitute honey instead of agave syrup for a vegetarian version.
Tofu Veggie Stir Fry – Use pressed, extra-firm tofu instead of the vegan protein “porkless” bites in this recipe! Just be sure to add a little extra sauce (maybe even double!) since the tofu will soak up a lot of it.
Vegetable Stir Fry – Not feeling the Gardein Porkless Bites? You can also omit them and just stick to the veggies, noodles, and sauce.
Cabbage Stir Fry (Vegan) – Substitute the noodles with shredded red or green cabbage instead!

Vegan Stir Fry
Equipment
Ingredients
- 7 ounces stir-fry noodles (soba, udon, or rice noodles)
- 2 Tablespoons freshly grated ginger
- 1 teaspoon minced garlic
- 1/4 cup low-sodium soy sauce (or coconut aminos)
- 1 Tablespoon sesame oil
- 1 Tablespoon agave syrup
- 1 Tablespoon avocado oil
- 1 cup thinly sliced bell peppers
- 2 cups broccoli florets
- 1/2 cup frozen peas
- 1/2 cup shredded carrots
- 1 package Gardein Sweet & Sour Porkless Bites
Instructions
- Bring 1 3/4 cup water to a boil. Add in the noodles, then remove from heat and allow the noodles to soften for 8-10 minutes. Drain and rinse with cold water. Set aside.
- While the noodles are cooking, create the sauce by mixing the ginger, garlic, soy sauce, sesame oil, and agave syrup.
- In a non-stick pan, saute the bell peppers and broccoli in the avocado oil for about 7-10 minutes. Add in the peas and shredded carrots.
- Pour in the sauce and simmer over medium heat for 5 minutes, stirring often.
- While the vegetables are cooking, add in the Gardein Sweet & Sour Porkless Bites (with the heated sweet & sour sauce as directed on the package). Cook until the vegetables have softened and the bites are heated throughout.
- Mix in the cooked noodles. Stir and enjoy!

This looks yummy!
Question, when you say heat the veggies in a pan, do you heat up some oil first? Thank you
Kaitrin Harnish says:
I didn’t see microwave directions on the package. Are you able to advise how you cook them in the microwave? I’m looking for quicker options for snacks that are high protein and these were recommended. Thanks in advance! 😀
Christine McMichael replied:
Hi, Kaitrin! These little bites are perfect for a quick and easy high protein snack! As far as how to microwave them, I actually only microwaved the sauce and heated up the bites in a pan for this recipe. However, I would think heating them up for about 1-2 minutes would be sufficient! Great question 🙂
Kathy Kenny Ngo says:
I like the sound of that. Meatless and porkless but still tasty. I’d add more noodles and some strong beans to make it tastier.
Christine McMichael replied:
Thanks, Kathy! 🙂
