- Dates – I used Deglet Noor dates (soaked in warm water), but Medjool dates work great, too!
- Tahini – Adds a creamy texture and nutty flavor. Swap with almond butter, peanut butter, or cashew butter if preferred.
- Vanilla Extract – A small touch, but it makes all the difference!
- Salt – You can use regular salt, but flaky sea salt on top is SO good.
- Dark Chocolate Chips – Use dairy-free chocolate to keep it vegan.
- Coconut Oil – Helps create that smooth chocolate coating. You can leave it out, but the chocolate might be a bit thicker. This also helps with the melting process!

Date Tahini Filling
- 20-24 medium pitted Deglet Noor dates (soaked in warm water for 10 minutes, or 15-18 Medjool dates)
- 1/4 cup tahini
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Chocolate Coating
- 3/4 cup dark chocolate chips
- 1 1/2 teaspoons coconut oil

Instructions
- Blend the dates, tahini, vanilla, and salt until smooth in a small cup blender or food processor. Scrape down the sides as needed. The mixture should resemble a sticky, creamy caramel.
- Scoop the caramel mixture and roll it into small balls (about 1 inch in diameter) and place them on a parchment-lined plate or sheet pan. Freeze for 15 minutes.
- In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil in 20-second intervals, stirring in between, until smooth and glossy.
- Using a fork or skewer, dip each chilled caramel ball into the melted chocolate, letting the excess drip off. Place them back on the parchment-lined tray.
- Quickly sprinkle the top of each truffle with flaky sea salt (or other toppings).
- Freeze the truffles for 10–15 minutes until the chocolate hardens. Enjoy or store in the fridge for later!

Love this recipe! I have a bit of an almond intolerance, so I tried substituting with coconut flour – works a treat, but was wondering if anyone had any suggestion for a more neutral tasting flour?

I would use oat flour for a substitution. You could also use protein powder, but that will have a bit of a stronger taste!
